Banana Bread Oat Muffins

Squidgy, melty and all-round delicious, you need these banana bread Granola Butter filled muffins in your life! This recipe serves 6 and can be cooked in the air-fryer or oven.

  • Ingredients

    2 x ripe bananas
    1 x large egg or flax egg
    150ml milk (dairy or plant-based)
    1 tsp vanilla extract
    100g rolled oats
    100g self-raising flour
    1 tsp ground cinnamon
    75g milk chocolate chips/chunks
    6 tsp of Smooth Granola Butter

  • Method

    Step 1: Preheat the oven to 180C fan/200C or air fryer to 170C. 

    Step 2: Peel both bananas and mash roughly with a fork in a large bowl. 

    Step 3: Add the egg, milk, and vanilla extract to the bowl and mix well. 

    Step 4: Blend the rolled oats in a food processor/blender and add to the bowl. 

    Step 5: Add the flour and cinnamon and mix until combined. Fold in the chocolate chips/chunks.

    Step 6: Grease 6 silicone muffin cases/holes of a non-stick muffin tin, then spoon in half of the batter. 

    Step 7: Add 1 tsp of Granola Butter to the centre of each muffin, then top with the remaining batter. Add a few extra choc chips on top/scatter over some rolled pats if desired.

    Step 8: Air-fry at 170C for 15 mins. If you have a bake setting on your air fryer use this, otherwise the regular air fryer setting is fine. Alternatively, you can oven bake at 180C fan/200C for 20 mins.

    Step 9: Either serve immediately (they are SO good served warm) or allow to cool completely on a wire rack before storing in an airtight container. Enjoy!
