Granola Butter Biscoff Mousse

A creamy and light caramelised biscuit flavoured mousse – like Biscoff but better! Made without dairy, gluten, and nuts, this is a dessert for everyone, regardless of dietary restrictions.

Cook time: 10 minutes

  • Ingredients

    1 x tin of full fat coconut milk (chilled) or 1 x pack of silken tofu (liquid drained).
    6 tbsp of Smooth Granola Butter
    3 tbsp maple syrup
    2 tbsp coconut oil, melted
    Pinch of salt
    1 tsp vanilla extract
    Optional topping:
    Berries of choice
    Cream or yoghurt

  • Method

    Step 1: Melt the coconut oil.

    Step 2: Blend together all of the ingredients until smooth and creamy.

    Step 3: Pour into ramekins or glasses, and chill until thickened. Top with cream or yogurt and serve with berries and a drizzle of maple syrup.

    Tip – add up to 6 tbsp cacao powder and omit the coconut oil for a chocolate mousse version!
